Making Baked Sweet Potatoes in the air fryer is so easy and the results have crispy skin and tender, fluffy insides. The best part is they cook faster in the air fryer than in the oven!

Ingredients

  • 2 medium sweet potatoes, 6-8 ounces each
  • 1 teaspoon olive oil
  • Kosher Salt and Pepper

Instructions

  1. Wash and Pierce - Scrub and dry the potatoes. Pierce the potatoes with a fork a few ties.
  2. Season - Rub the potatoes with olive oil and sprinkle with salt and pepper.
  3. Air Fry - Add the sweet potatoes to the air fryer basket and air fry at 375 degrees F for 35-45 minutes, depending on potato size, until tender. My 8oz potatoes took 40 minutes.
  4. Serve - Allow to cool for a few minutes then cut in half and serve.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in the air fryer at 350 degrees F for 5-10 minutes until warmed. You can wrap in foil if the skin is getting too crispy.
