This Air Fryer Whole Sweet Potato recipe gives you the same tender results of a baked sweet potato, but with crispier skin. Baking a whole sweet potato in the air fryer is also faster than using the oven!

Ingredients

  • 2 medium sweet potatoes, 6-8 ounces each
  • 1 teaspoon olive oil
  • Kosher Salt and Pepper

Instructions

  1. Wash and Pierce - Scrub and dry the potatoes. Pierce the potatoes with a fork a few ties.
  2. Season - Rub the potatoes with olive oil and sprinkle with salt and pepper.
  3. Air Fry - Add the sweet potatoes to the air fryer basket and air fry at 375 degrees F for 35-45 minutes, depending on potato size, until tender. My 8oz potatoes took 40 minutes.
  4. Serve - Allow to cool for a few minutes then cut in half and serve.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in the air fryer at 350 degrees F for 5-10 minutes until warmed. You can wrap in foil if the skin is getting too crispy.
