Banana Bread Baked Oats are a healthy and filling breakfast that tastes like your favorite banana bread with a denser texture! The batter is made by blending oats with bananas and some other simple ingredients (no flour!) before baking in the oven.

Ingredients

  • 2 medium very ripe bananas
  • 2 eggs
  • 1 cup old-fashioned or rolled oats
  • 2 tablespoons pure maple syrup, or honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 2-3 tablespoons chocolate chips

Instructions

  1. Prep - Preheat the oven to 350 degrees F with the rack in the middle and spray two 7-8 ounce ramekins with cooking spray. Place the ramekins on a baking sheet.
  2. Blend Batter - Add all ingredients, except for the chocolate chips, to a blender or food processor. Blend for 30 seconds to a minute until the batter is smooth.
  3. Add to Ramekins - Pour the batter into the ramekins and top with the chocolate chips. Let them sit for 5-10 minutes so the oats can absorb some of the liquid.
  4. Bake - Bake in the preheated oven until the baked oats are puffed up, pulling away from the sides, and a toothpick inserted comes out with no wet batter.
  5. Enjoy - Let cool for a few minutes then serve and enjoy!

Notes

Leftovers - Leftovers can be stored in the fridge for up to 4 days. Reheat in the microwave for about a minute or until warmed.

Other Baking Dish - If you don't have ramekins, you can use other small baking dishes or combine into one dish. The bake time will need to be adjusted.
