Buffalo Grilled Chicken Sandwich

This recipe to make a Buffalo Grilled Chicken Sandwich at home takes under 30 minutes and is an easy, summer grilling dinner. Season chicken breasts with simple spices, grill, then slather in buffalo sauce. 

Ingredients

  • 2 large, thin boneless chicken breasts, cut in half to make 4 pieces
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup buffalo sauce
  • Brioche buns, for serving
  • Ranch or Blue Cheese Dressing, for serving
  • Lettuce Leaves, for serving

Instructions

  1. Preheat Grill - Start by getting your grill preheating for direct heat to Medium-High (about 450 degrees F).
  2. Prep Chicken - If you didn't buy thinner pieces of chicken, then cover the regular chicken breasts with plastic wrap before using a meat mallet to pound the chicken to a thinner, even thickness. Cut them in half so you have four 'sandwich-sized' pieces. Season the chicken pieces on both sides with the spices.
  3. Grill Chicken - Place the seasoned chicken on the grill and grill on the first side for about 5 minutes, flip and grill for about 4 minutes more, then brush with the buffalo sauce and cook for 1 more minute before flipping and repeating to other side. The chicken should read 165 degrees F on an internal thermometer.
  4. Serve - Allow chicken to rest for a few minutes before placing on buns, with lettuce, and dressing of choice. Enjoy!

Notes

Store leftover chicken in an airtight container in the fridge for up to 4 days.
