Chicken Apple Sausage Mason Jar Salad

Description

Chicken Apple Sausage Mason Jar Salads are an easy and healthy meal prep option that are perfect for lunches. An easy apple cider vinaigrette dressing topped with chicken sausage, apples, dried cranberries, pecans, and lettuce.  Making a salad in a jar lets them last in the fridge for the week.

Salad Ingredients

  • 4 Chicken Apple Sausage links (12-16oz total), sliced
  • 2 medium Apples, chopped
  • 1.5 tablespoon Lemon Juice
  • 3/4 cup Dried Cranberries
  • 3/4 cup Pecans, chopped
  • 5 oz Spring Mix, or other lettuce
  • 4 quart-sized Mason Jars

Apple Cider Vinaigrette

  • 1/4 cup Apple Cider Vinegar
  • 1/3 cup Olive Oil
  • 1 tablespoon Honey
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Lemon Juice
  • Salt and Pepper

Instructions

  1. Make the Dressing. Either by shaking in a small jar or mixing in a small bowl, combine all vinaigrette ingredients. Shaking or mixing until well combined. Season with a pinch of salt and pepper to taste.
  2. Prep the Salad Ingredients. Chop and slice the ingredients according to recipe. Toss the chopped apples with the lemon juice to prevent browning during storage.
  3. Layer the Salad Jars. Divide the vinaigrette evenly among four quart-sized mason jars. Top the dressing with the sliced chicken sausage, dividing evenly among the jars. Followed by the pecans and dried cranberries. The pecans and cranberries should cover the apples providing a barrier between the lettuce. Finally, top off with the lettuce filling each jar to the top. 
  4. Store Jars. Tightly close each jar with its lid and store in the fridge for 4-5 days. 
  5. When ready to eat… The olive oil in the vinaigrette will solidify slightly in the fridge due to the cold. Allow the jar to sit at room temperature for about 10 minutes so the dressing can warm up (or you can run the bottom of the jar under warm water). Dump the jar into a large bowl, toss, and enjoy!

Notes

The salads will keep in their mason jar in the fridge for 4-5 days.
