Firecracker ground chicken is super easy to make, ready in 15 minutes, and great for meal prep! Cook up ground chicken with a simple, slightly spicy, firecracker sauce and serve with rice and veggies. It's a great healthy weeknight dinner recipe that you'll make again and again.

Ingredients

Firecracker Sauce

  • 1/2 cup buffalo sauce
  • 2 tablespoons soy sauce
  • 1/4 cup honey, or brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • 2 teaspoons garlic powder
  • Salt and Pepper, to taste

Chicken

  • 1 tablespoon olive oil
  • 1 lb ground chicken
  • 2-3 green onions, thinly sliced
  • Cooked rice and veggies, for serving

Instructions

  1. Mix Sauce - In a small bowl, mix up the firecracker sauce ingredients. I like to go light on added salt since the soy sauce is salty.
  2. Cook Chicken - Heat a large skillet over medium heat with the oil. Once hot, add the chicken. Cook, while crumbling, until almost fully cooked.
  3. Add Sauce - Add the firecracker sauce to the chicken and combine with the chicken while letting the chicken finish cooking. Cook for a couple of minutes so the sauce slightly thickens and cooks into the chicken. Sprinkle the chicken with the sliced green onions.
  4. Serve - Serve the chicken with rice and steamed veggies.
