Ingredients
- 1 15.25oz box Funfetti cake mix
- 2 large eggs
- 1/3 cup oil, such as canola oil, vegetable oil, or avocado oil.
- 1/2 teaspoon kosher salt
- Extra sprinkles, optional
Instructions
- Mix Eggs and Oil - In a medium bowl, whisk together the eggs and oil until combined.
- Add Cake Mix - Add the cake mix and salt and mix together until combined into a dough.
- Preheat Oven and Chill Dough - Preheat the oven to 350 degrees F. Pop the dough in the fridge to chill for about 20 minutes while you preheat the oven.
- Scoop Cookies - Use a 1.5 tablespoon cookie scoop to scoop the dough onto a parchment lined baking sheet (leave a couple inches in between each). I like to top each with a few extra sprinkles.
- Bake - Bake in the preheated oven for 9-11 minutes. The cookies are done when they are light golden brown on the edges and just set on top.
- Cool on Baking Sheet - Let them cool on the baking sheet for 5-10 minutes so they finish cooking.
