Instant Pot Shredded Beef is tender, tangy, and perfect piled into sandwiches. Only 5 minutes of prep and just an hour of cooking in the Instant Pot for a fast and easy dinner. Italian Shredded Beef is often served in hoagie rolls with provolone cheese, giardiniera, and extra broth for dipping.

Ingredients

  • 3 pound boneless chuck roast
  • 2 teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 3 cups low-sodium beef broth
  • 1/2 white or yellow onion, diced
  • 1 cup pepperoncini peppers, plus 1-2 tablespoons of the juice
  • Optional For Making Sandwiches - Hoagie Buns/Rolls, Provolone Slices, Giardiniera

Instructions

  1. Prep - Start by cutting the chuck roast into 3 big pieces. You can also trim and discard any excess fat. 
  2. Add to Instant Pot - Add the chuck roast pieces to the instant pot and sprinkle over the spices. Give the chuck roast a couple flips to coat in the spices then add the remaining ingredients (broth, onion, peppers + juice).
  3. Pressure Cook - Set the Instant Pot lid to 'sealing' and cook on manual high pressure for 55 minutes. Natural release the pressure (let it sit) for 15 minutes then quick release the remaining pressure.
  4. Shred Beef - Remove the chuck pieces to a plate and shred with two forks. The meat should easily shred and fall apart.
  5. Toast Rolls (Optional) - If serving as sandwiches, split the rolls open and add 1-2 slices of provolone cheese. Place on a sheet pan and pop under the broiler heated to Low for a couple of minutes to melt the cheese and toast the bun. Keep an eye on the rolls while under the broiler so they don't burn.
  6. Assemble Sandwiches - Pile in the shredded beef, drizzle over some of the juice, and top with giardiniera. You can serve with a bowl of the broth for dipping as well.

Notes

No Pepperoncini Peppers? If you don't have or don't want to use the pepperoncini peppers, you'll want to add something else to give it tang. You can use 1/4 cup of the brine from the jar of giardiniera if you're using that for serving or even 1/4 cup of white vinegar.
