The Apple Cake is very easy to mix up. We start with mixing LOTS of brown sugar with some oil, egg, vanilla, buttermilk (or vinegar + milk) and baking soda. Then just mix in the flour and fold in lots of chopped apples. I used granny smith apples because I had them on hand, but use whatever you’ve got! Finally, we sprinkle on a topping made of melted butter, cinnamon, and sugar. Holy YUM! Now just try to be patient for the 45 minutes while it bakes – the smell coming from the oven makes this difficult.

Instructions
  1. Preheat the oven to 325 degrees. Butter (or use cooking spray) a 13 x 9 pan or baking dish.
  2. In a large bowl, mix together the brown sugar, oil, egg, buttermilk, baking soda and vanilla extract. Once mixed, stir in the flour and then fold in the apples. Pour into greased pan.
  3. For the topping - mix together the butter, sugar, and cinnamon. Using your fingers, sprinkle evenly over the top of the cake batter. Bake for 45-50 minutes. Enjoy!
