Cinco de Mayo is just around the corner and it’s never too early to start getting in the fiesta mood! I’m a salsa girl. To me the chip is nothing but a vehicle to get the salsa in my mouth. You know what’s another vehicle to do this? A giant spoon. I also don’t discriminate against my salsa. Chunky, smooth, sweet, spicy, I like them all. This pineapple salsa is one of my faves because of how EASY it is to whip up. And it uses a whole pineapple so it makes a large batch with plenty to go around! Or, if you’re like me, you’ll eat half the bowl yourself and then whine about the canker sore the excess pineapple gave you. But honestly, #worthit.
