Ingredients
  • 2cans chickpeas (garbanzo beans)rinsed and drained
  • 1pint cherry tomatoeshalved
  • 1medium onionminced
  • 1 green bell peppersmall diced
  • 2cups small diced cucumberabout 1 large hothouse cucumber
  • 1/2cup chopped parsley
  • 2tablespoons olive oil
  • 2tablespoons red wine vinegar
  • salt and pepperto taste
  • 6oz crumbled fetaoptional
Instructions
  1. Mix all ingredients together in a large bowl. Allow to sit for 30 minutes before serving. Serve cold or at room temperature. Top with feta if desired. Store in an airtight container in the refrigerator for up to 5 days.
