Instant Pot (or Slow Cooker) BBQ Pulled Pork with Jalapeño Slaw
Pulled Pork to many (past myself included) think equals low and slow cooking. Nothing wrong with that. If you have the time and patience to cook your pork for 12 hours at 200 degrees or for 8 hours in your slow cooker, don’t let me stop you. BUT, if you want some moist (sorry..), juicy, and sweet pulled pork done in just a little over an hour, well read on.
By now, you’ve probably realized that I love my Instant Pot. I was surprised that I use it more in the warmer months than I did in the winter. But, really I shouldn’t be surprised. Recipes that usually would require long oven cook times that heat up your kitchen, the Instant Pot swoops in and steals the day. I used a pork sirloin roast (I buy mine in a multipack from Costco), but substituting a pork shoulder would also be great. IF you don’t have an Instant Pot, or want to come home from work and have dinner done, I included instructions to modify for the slow cooker below.
If the quicker cook time, didn’t sell you, I’ve got one more thing that makes this meal amazing. Jalapeño Slaw. It’s fresh, crunchy, has a slight spice from the jalapeños, colorful and it perfectly counteracts the sweet and juicy pulled pork. Serve the pork and slaw on nice big, lightly toasted and buttered buns for a dinner or on small sliders for perfect party food.
