Sesame-Ginger Slaw Salad
This Sesame-Ginger Slaw Salad is the perfect light yet filling meal. Extra colorful from the red cabbage, carrots, and zucchini, but made extra flavorful from our Sesame-Ginger Dressing. I add chicken for protein and to make this a complete meal. But, you could absolutely omit the chicken and serve this as a side instead of the main dish. But, seriously. How pretty is this slaw salad?
Sesame Ginger Dressing
The real star of the slaw salad is the Sesame Ginger Dressing. Fresh ginger and tahini give the dressing its namesake sesame-ginger flavorful, but we don’t stop there. A little orange juice adds sweetness to the dressing without having to add any sugar. Rice vinegar gives a kick of acidity and bumps up the Asian flavors even more. Coconut Aminos (or soy sauce) add a little saltiness. And finally, olive oil brings it all together. Just dump the ingredients in a food processor (I used my mini cuisinart for this) and give it a whirl.
Let’s Talk Spiralizing
Let’s talk the veggies. I made good use of my spiralizer for this recipe. Most people are aware of the magic that are zucchini noodles. But have you ever tried spiraling carrots? The key is to find the thickest carrots you can. I like to buy mine individually in the loose carrot section vs buying a big bag. This lets me pick out the widest ones I can find. And what about cabbage? Shredding cabbage by hand can be a PAIN. And not to mention a huge MESS. Well, pop it on your spiralizer and it makes quick work of that cabbage. Now, if you don’t have a spiralizer (really, you should consider buying one), you can still make this recipe!
Lots of grocery stores now sell pre-spiralized vegetables. BUT, I know that can be pricey. A few options. And while I think the noodles are prettier, substituting the below options will not impact the taste of the final dish at all 🙂
- Zucchini Noodles – Slice with a julienne vegetable peeler
- Carrot Noodles – Slice with a julienne vegetable peeler or just buy a bag of shredded carrots
- Spiralized/Shredded Cabbage – Shred by hand with a knife or just buy a bag of shredded cabbage.
Once you have all of your vegetables prepped and ready, pop them in a BIG bowl. You’ll want to have room to toss everything up. Add your cooked shredded chicken (a great way to use up some chicken you may have meal prepped, or just pick up a rotisserie chicken. easy.) Drizzle on our Sesame Ginger Dressing and give everything one more good toss.
Voila. You’re left with one GIANT Sesame-Ginger Slaw Salad. As colorful as a rainbow, fresh, healthy, filling, and most importantly, flavorful.
