Ingredients
Sesame Ginger Dressing
  • 1/3cup olive oil
  • 3tablespoons orange juice
  • 3tablespoons rice vinegar
  • 1 1/2tablespoons coconut aminosor low sodium soy sauce
  • 2tablespoons crushed or minced ginger
  • 2 garlic clovesminced
  • 1tablespoon tahinior 1 tablespoon sesame seeds
Slaw
  • 1/2head red cabbagespiraled or shredded. Or a 10oz bag of shredded red cabbage
  • 2 medium carrotsspiraled or sliced with a julienne peeler. Or a 10oz bag of shredded carrots.
  • 2 large zucchinispiraled or sliced with a julienne peeler. About 16oz.
  • 1 1/2lbs cooked shredded chicken
  • sesame seedsoptional, for sprinkling
Instructions
  1. In a food processor or blender, blend all Dressing ingredients until smooth.
  2. In a very large bowl, toss together the cabbage, carrots, zucchini, and chicken. Pour over the dressing and toss together. Sprinkle sesame seeds on top and serve.
