Sweet Potato Pork Stew – Instant Pot & Slow Cooker!
Are you more a soup or stew person? Or do you not discriminate against a warm, comforting bowl of either? When I’m feeling under the weather and looking for something light, I am totally team soup. BUT, when it’s -15 degrees outside, I’m wearing pajamas at 6pm on a Tuesday, and looking for something warm that will fill me up, bring on the stew. Gimme chunky, hearty, and flavorful. Sweet Potato Pork Stew fits the bill.
Often you hear the question, Instant Pot or Slow Cooker? I hate that question. Why do I have to choose? To me, they serve very different purposes. Although most recipes can be made in both, their time and place varies. Up early before work or getting a start on dinner on Sunday morning? Slow cooker saves the day. Getting home after work with no food prepped? Instant Pot all the way.
Now I know that the Instant Pot technically has a slow cooking function. However, I much prefer my OG slow cooker.
What you’ll need:
- Ground Pork
- Vegetable Broth
- Sweet Potatoes
- Thyme and a few other spices
I love the balance of this Sweet Potato Pork Stew. The jalapeños provide the perfect contrast to the sweetness of the apples and sweet potatoes. And the thyme adds the perfect subtle, dry aroma to the stew.
No matter if we’re using the Instant Pot or Slow Cooker method, we always start the same way. By browning our pork. Browning ground meat before using in either appliance is soooo important. This not only brings out the best flavors of the meat, but it keeps ground meat from lumping together. This applies to ground pork, ground beef, ground, chicken, or ground turkey. When in doubt, brown your meat.
