- 16oz whole milk ricotta cheese
- 2 large eggs
- 1 cup grated parmesan cheese
- 2 tablespoons thinly sliced chives
- 1/4 teaspoon red pepper flakes
- Prep - Get the oven preheating to 400F and spray a 1.5-2qt baking dish with cooking spray.
- Mix Dip - In a large bowl, stir together all of the ingredients until well combined, minus a tablespoon or two of parmesan cheese for the top.
- Transfer to Dish - Transfer the ricotta mixture to the baking dish and sprinkle with a little extra parmesan cheese.
- Bake - Bake in the preheated oven for about 25-30 minutes or until the ricotta has puffed up and is golden brown on top.
- Serve - Serve warm with bread or crostini.
