Ingredients

Sesame Ginger Dressing

  • 1/3 cup olive oil
  • 3 tablespoons orange juice
  • 3 tablespoons rice vinegar
  • 1 1/2 tablespoons coconut aminos (or low sodium soy sauce)
  • 2 tablespoons crushed or minced ginger
  • 2 garlic cloves (minced)
  • 1 tablespoon tahini (or 1 tablespoon sesame seeds)

Slaw

  • 1/2 head red cabbage (spiraled or shredded. Or a 10oz bag of shredded red cabbage)
  • 2 medium carrots (spiraled or sliced with a julienne peeler. Or a 10oz bag of shredded carrots.)
  • 2 large zucchini (spiraled or sliced with a julienne peeler. About 16oz.)
  • 1 1/2 lbs cooked shredded chicken
  • sesame seeds (optional, for sprinkling)

Instructions

  1. In a food processor or blender, blend all Dressing ingredients until smooth.
  2. In a very large bowl, toss together the cabbage, carrots, zucchini, and chicken. Pour over the dressing and toss together. Sprinkle sesame seeds on top and serve.
