Sheet Pan Pineapple Shrimp is an easy 15-minute weeknight dinner! This Hawaiian shrimp inspired recipe is so easy to make. Broil pineapple, bell peppers, and shrimp with a simple teriyaki-inspired sauce that's made with pantry ingredients. Serve with your favorite cooked rice - even instant!

Ingredients

Sheet Pan Pineapple Shrimp

  • 1 lb raw 16-20ct shrimp, cleaned and deveined. Tails optional.
  • 2 red bell peppers, diced
  • 2 cups diced fresh pineapple
  • 2 tablespoons olive oil
  • Salt and Pepper
  • Cooked Rice, for serving

Sauce

  • 1/4 cup low sodium soy sauce
  • 3 tablespoons lime juice
  • 3 tablespoons honey
  • 1 tablespoon chili garlic sauce, adjust to spice preference

Instructions

  1. Preheat Broiler and Make Sauce.  Preheat broiler to high and line a sheet pan with foil. Mix up the sauce in a small bowl.
  2. Add Peppers and Pineapple. Add diced bell pepper and pineapple to prepared sheet pan. Drizzle with the olive oil and salt and pepper, to taste. Toss to coat and spread into an even layer.
  3. Broil. Broil peppers and pineapple for 5 minutes until starting to soften - they'll be put back under the broiler again.
  4. Add Shrimp. Remove sheet pan from oven, add the raw shrimp and drizzle over about half of the sauce. Gently toss to combine.
  5. Broil Again. Broil again for 2-3 minutes until shrimp are cooked - just turning pink and opaque. Watch carefully so you do not overcook the shrimp or burn anything. The boiler cooks food quickly!
  6. Serve. Serve with cooked rice and drizzle over extra sauce.
