Sheet Pan Shrimp Fajitas are so easy to make and super flavorful! Toss shrimp, onions, and peppers with fajita seasoning then cook all together on a sheet pan in the oven. Ready in under 30 minutes and perfect for a busy weeknight dinner.

Ingredients

  • 3 Bell Peppers
  • 1 large Red Onion
  • 1 lb large shrimp, peeled and deveined - tails optional 
  • 3 tablespoons Canola Oil
  • 2 tablespoons Fajita Seasoning, see note

Instructions

  1. Prep - Start by preheating the oven to 425 degrees F and slicing up the peppers and onions.
  2. Season Peppers and Onions - Add the sliced peppers and onions to a large sheet pan, drizzle over 2 tablespoons of the oil and 1 tablespoon of the fajita seasoning, and toss everything to combine. Make sure everything is evenly coated. 
  3. Bake Peppers and Onions - Spread it all out on the pan and bake in the oven for about 10-12 minutes until the veggies are starting to soften.
  4. Add Shrimp  - In a medium bowl, toss together the shrimp with remaining oil and the remaining fajita seasoning. Push the peppers and onions to one half of the pan and add the shrimp to the other half in an even layer.
  5. Bake Shrimp  - Return pan to the oven and cook for an additional 5-7 minutes (depending on size of shrimp) until the shrimp are fully cooked (opaque and pink).
  6. Serve - Serve with warmed tortillas and your favorite toppings!

Notes

Fajita Seasoning - You can buy a blend at the store or you can easily make your own using pantry spices using this recipe. You can adjust the amount of seasoning used to suit your taste.
