In my book, summer calls for a few things: boat rides, evening walks to take advantage of the late sunsets, eating and drinking on any and every rooftop, and…. lots of margs. Blended, on the rocks, with or without salt. Bring ’em on. I have nothing against a classic margarita (especially with a side of chips and guac), but it can be fun to mix up the flavor combinations a bit. Enter these Watermelon Margaritas.
This recipe serves 2 – but can easily be doubled or tripled (or heck even quadrupled) to feed a crowd. Just 4 ingredients and a quick whirl in your blender and you’re good to go.
Because you’re going to serve these over ice, feel free to mix them up earlier in the day and store in the fridge. Then when it’s 5 o’clock somewhere just pour over ice and enjoy.
Fruity and sweet, but still with the right amount of tequila hit. You’re just 4 ingredients and 30 seconds in your blender away from enjoying these margaritas outside in the sunshine.
- 4 ounces tequila
- 2 tablespoons agave
- 1/4 cup lime juice
- 2 cups cubed watermelon
- lime wedges and sugar or salt (optional for rims)
- Add tequila, agave, lime juice, and cubed watermelon to a blender. Blend for about 30 seconds on medium-high until well blended and smooth.
- Optional: Rub rims of two glasses with a lime wedge, dip glass rims in sugar or salt.
- Pour drinks: add ice to glasses, pour margaritas over ice and serve. Enjoy!
These can be mixed up a few hours in advance and stored in the refrigerator. When ready to enjoy, just pour over ice and enjoy 🙂
