This White Bean Tuna Salad is your solution to lunch meal prep! No cooking needed and it only takes 10 minutes to mix together. Pack it up for easy lunches throughout the week. There is also no mayo used in this tuna salad!

Ingredients

  • 1 15oz can white beans, drained and rinsed
  • 1 5-6oz can chunk light tuna in water
  • 2-3 green onions, thinly sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and Pepper

Instructions

  1. Prep Ingredients- Rinse and drain the beans and drain the can of tuna. Thinly slice the green onions.
  2. Mix up the Salad - In a bowl, mix together the salad ingredients - tuna, beans, sliced green onions, lemon juice, olive oil, and a pinch of both salt and pepper. Stir to combine - you can slightly mash the beans if you prefer. Taste and adjust salt, pepper, and lemon juice.
  3. Pack and Store - Store the tuna salad in airtight containers in the fridge for 4 days. It is best eaten cold from the fridge or after sitting at room temperature for a few minutes.

Notes

Tuna - if your tuna is packed in oil, you can omit some or all of the olive oil.
