One Pot Cajun Rice with Sausage

One Pot Cajun Rice with Sausage is an easy weeknight dinner ready in about 30 minutes. Cooking the jambalaya rice in the same pot with the other ingredients results in both more flavor but also easier clean up!

Ingredients

  • 1 tablespoon olive oil
  • 14oz Andouille sausage, sliced into 1/4-1/2 inch slices
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground cayenne pepper
  • 1/8 teaspoon ground black pepper
  • 15oz can fire roasted diced tomatoes
  • 1 cup long grain white rice
  • 2 cups chicken broth or stock
  • 2-3 green onions, sliced

Instructions

  1. Brown Sausage and Peppers - Heat a large, deep sauté pan dutch oven with tight fitting lid on medium heat and add the oil. Brown the sliced sausage then add the chopped bell pepper and sauté until starting to soften and getting lightly charred. Just about a minute or two.
  2. Add Ingredients - Add the spices to the pan and cook for 30 seconds - 1 minute so the spices toast. Add the tomatoes, rice, and broth to the pan. Stir to combine and make sure to scrape any bits off of the bottom of the pan.
  3. Cook Rice - Cover the pan with a lid, increase the heat to medium-high, and bring to a boil. Once boiling, turn down the heat to maintain a simmer. Simmer for about 20 minutes, giving a quick stir every 5 minutes so nothing sticks to the bottom. After 20 minutes, the liquid should be almost absorbed - turn off the heat, keep covered with a lid, and let rest for about 5 minutes. The rice should be cooked and the liquid should be absorbed.
  4. Serve - Garnish with sliced green onions and enjoy!
