One Pot Cajun Rice with Sausage is an easy weeknight dinner ready in about 30 minutes. Cooking the jambalaya rice in the same pot with the other ingredients results in both more flavor but also easier clean up!

Ingredients You'll Need for One Pot Cajun Rice:
Only easy to find ingredients are needed to make this Jambalaya-inspired rice:
- Andouille Sausage - I used the sausage that is already cooked. You can sub in a different type of sausage - such as Kielbasa.
- Olive Oil - or other cooking oil
- Bell Pepper - Color of choice
- Cajun Spice Blend - Paprika (smoked or regular), Dried Oregano, Dried Thyme, Garlic Powder, Onion Powder, Cayenne Pepper, Ground Black Pepper
- Canned Fire Roasted Diced Tomatoes - Regular diced tomatoes can be subbed
- White Rice - regular long grain white rice
- Chicken Broth or Stock
- Green Onions - Sliced to sprinkle on top
How To Make Cajun Rice in One Pot
- Brown Sausage and Peppers - Brown the sliced sausage in a large, deep sauté pan then add the chopped bell peppers and sauté until starting to soften and getting lightly charred. Just about a minute or two.
- Add Ingredients - Add the cajun spices to the pan and cook for 30 seconds - 1 minute so the spices toast. Add the tomatoes, rice, and broth to the pan. Stir to combine and make sure to scrape any bits off of the bottom of the pan.
- Cook Rice - Cover the pan with a lid, increase the heat to medium-high, and bring to a boil. Once boiling, turn down the heat to maintain a simmer. Simmer for about 20 minutes, giving a quick stir every 5 minutes so nothing sticks to the bottom. After 20 minutes, the liquid should be almost absorbed - turn off the heat, keep covered with a lid, and let rest for about 5 minutes. The rice should be cooked and the liquid should be absorbed.
- Serve - Garnish with sliced green onions and enjoy!
What is Cajun seasoning?
Cajun cooking originated in New Orleans and is a blend of many cultures. Seasoning blends vary blend to blend but they all have similarities. Cajun seasoning blends focus on spices, but often contain the herb oregano. The heat in the blend comes from cayenne pepper. Creole Seasoning is similar to Cajun, but it does not have the same spice level. If you don't love spice, then go ahead and substitute a creole blend in this recipe! This Instant Pot Creole Chicken and Sausage recipe also uses the seasoning.
Recipe Notes and Tips:
- Deglaze Pan - After you add the tomatoes and broth, make sure you scrape any bits off the bottom of the pan. There is so much flavor there!
- Stir Occasionally - When the rice is cooking, I like to give it a quick stir (scraping the bottom) about every 5 minutes so nothing sticks to the pan.
- Cajun Spice - If you have a cajun spice blend, you can use that instead of the individual spices. I recommend using a spice blend that is low on salt as the chicken broth gives the dish enough salty flavor. - Sausage - I used Andouille Sausage, but you can swap in another smoked pork sausage
- Spice Level - As written, this recipe is a mild-moderate spice level. If you don't want any spice, you can omit the cayenne pepper. And if you like it hot, then add more cayenne pepper.
Storage, Freezing, and Reheating:
- Storage - Leftover rice can be stored in an airtight container in the fridge for up to 4 days.
- Freeze - For longer storage, you can freeze the rice tightly covered, for up to 3 months.
- Reheating - Leftover rice can be reheated in the microwave or in a pot on the stove until warmed. You can add a splash of water when reheating to help loosen everything up and remoisten the rice.
