One-Pot Lemon Chicken Pasta

One-Pot Pasta recipes are perfect for an easy dinner with little clean up. This One-Pot Lemon Chicken Pasta is so creamy, flavorful, and comes together in about 30 minutes or less. 

Ingredients

  • 1 medium yellow or white onion, diced
  • 1 tablespoons minced garlic
  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized chunks
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and Pepper, to taste
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes, optional
  • 4 cups chicken broth
  • 16oz Penne Pasta, or other short noodle like rigatoni
  • 1 lemon, zested and juiced
  • 1/2 cup heavy cream
  • Grated Parmesan Cheese, for serving
  • Extra Lemon Wedges, for serving

Instructions

  1. Cook Onion  - In a large, deep sauté pan (or dutch oven) heat the olive oil and butter over medium heat until the butter is melted. Add the onion and cook for 3-4 minutes until tender.
  2. Brown Chicken - Add the chicken, season with a pinch of salt and pepper, and cook for 5-7 minutes until the chicken is lightly browned (it's okay if it's not fully cooked through yet). Add the minced garlic, dried basil, and red pepper flakes and cook for about 30 seconds more until fragrant.
  3. Add Pasta - Add the dry pasta and chicken broth to the pan. Stir to combine and press down so the pasta is submerged. Bring to a boil, then lower heat to a simmer and cover. Cook while simmering for 8-12 minutes until the pasta is cooked to al-dente.
  4. Finish Pasta - Stir in the lemon zest, lemon juice, and cream. Mix well and allow to simmer for 1-2 minutes.
  5. Serve and Enjoy - If desired, serve the bowls of pasta with lemon wedges and sprinkle with fresh grated parmesan.
