Peach Ricotta Crostini is a fun, easy appetizer for summer. Other than a quick grill (or toast in the oven) of the bread slices, there is no cooking required. Super impressive for a dinner party but super simple to make.

  • 16 baguette slices
  • 23 tablespoons olive oil
  • 1 cup whole milk ricotta
  • 1 tablespoon honey
  • 2 large fresh peaches, thinly sliced
  • Balsamic glaze, for drizzling
  • 1/4 cup thinly sliced basil

  1. Grill Bread – Preheat the grill to medium. Brush the bread slices on both sides with the olive oil. Grill on the preheated grill for 1-2 minutes per side until toasty and golden. Transfer to a plate.
  2. Mix Ricotta – In a small bowl, mix together the ricotta and honey. Slice peaches and basil.
  3. Assemble Crostini – Spread each slice of bread with about 1 tablespoon of the honey ricotta. Top with 1 or 2 peach slices, drizzle with balsamic, and sprinkle with the basil.
  4. Serve Immediately
