- Brown Sugar - I use light brown sugar, but you can also use dark brown sugar. When measuring, make sure to pack the brown sugar into the measuring cup.
- White Granulated Sugar
- Egg Yolk - Using only the egg yolk helps keep the recipe extra small. You can use up the leftover egg white in this Single Serve
- Vanilla Extract - For flavor!
- Sour Cream or Plain Greek Yogurt - Helps give the cake a moist texture while also reducing the amount of oil used.
- Ground Cinnamon, Ground Ginger, Ground Nutmeg, and Allspice - Warm spices that complement the fresh apple perfectly!
- All-Purpose Flour - When measuring flour, make sure to use the 'spoon and level' method. This is where you spoon the flour into the measuring cup and then level off the top. Instead of dipping the measuring cup directly into the flour bin which can lead to over measuring.

- Kosher Salt - I like the Diamond Kosher Salt. A small amount of salt is so important to balance the sweetness in cookies. If you use table salt, then I would cut the amount by half.
- Grated Apple - Use the large holes in a box grater to grate up a fresh apple. I like to leave the skin on for ease, but you can peel the apple if you prefer. Any apple that you like to use for baking works great - I love using Honey Crisp or Granny Smith apples.

This recipe for a Single Serve Apple Cake is easy to mix up with no mixer and is loaded with fresh grated apple and warm fall spices.

Photo 1 - In a mixing bowl, whisk together the oil and sugars to combine.

Photo 2 - Add the egg yolk, greek yogurt (or sour cream), and vanilla and whisk to well combine.

Photo 3 - Add the flour, baking soda, and spices. Use a rubber spatula to gently mix in until almost fully combined.

Photo 4 - Then fold in the grated apples.

Photo 5 - Add the batter to the greased ramekin and place on a baking sheet (just in case of any overflow, this did not happen in my ramekin but it did rise up to the very top edge).

- Ramekin Size - I used one large ramekin (10 ounces to the top rim and ~4.25 inches wide) but you can use a bigger ramekin or smaller ramekins and just adjust the bake time.
- Don't Over Bake - The key to a moist cake is to not over bake it! Cake is done when a toothpick inserted comes out clean or with a few moist crumbs.

- 2 tablespoons white granulated sugar
- 1 egg yolk
- 1.5 tablespoons plain greek yogurt or sour cream

- Prep - Preheat the oven to 350 degrees F and well grease a large ramekin with butter or cooking spray (mine was 10 ounces to the very top and ~4.25 inches wide and it was just big enough). I also like to add a circle of parchment paper to the bottom.
- Wet Ingredients - In a mixing bowl, whisk together the oil and sugars to combine. Add the egg yolk, greek yogurt (or sour cream), and vanilla and whisk to well combine.
- Dry Ingredients & Apples - Add the flour, baking soda, and spices. Use a rubber spatula to gently mix in until almost fully combined then fold in the grated apples.
- Add to Ramekin - Add the batter to the greased ramekin and place on a baking sheet (just in case of any overflow, this did not happen in my ramekin but it did rise up to the very top edge).
- Bake - Bake for about 30 minutes (depending on ramekin size). The cake is done when a toothpick comes out clean. I recommend to start checking at 25 minutes.
