For the Crisp Topping
- Melted Unsalted Butter - This helps bind the oat topping together. You can also use salted butter and just omit the salt.
- Brown Sugar - When measuring brown sugar, make sure you pack it into the measuring cup. I typically use light brown sugar for this recipe, but dark brown sugar works too.
- Classic Oats - Also known as Rolled Oats or Old Fashioned Oats. These add that classic crunch to the crisp topping.
- All Purpose Flour - You'll want to use the 'spoon and level' method when measuring flour to avoid over measuring. If you want to make this recipe gluten free, you can use a 1:1 Gluten Free Flour Blend.
- Ground Cinnamon - I like to add a little cinnamon to both the topping and the apple filling.
Apple Filling
- Apple - It's up to you on what type of apple you use! Granny Smith is a popular choice for baking, but I've made this many times with a Honey Crisp as well and it's great! Peeling the apple is up to you then just a quick chop!
- All Purpose Flour and White Sugar - A little bit of flour and sugar helps sweeten the apple filling and helps the juices thicken.
- Ground Cinnamon - I like to add a little cinnamon to complement the apple flavor.

This is where you spoon the flour into the measuring cup and then level off the top. Instead of dipping the measuring cup directly into the flour bin which can lead to over measuring.
- Peeling the Apple is Optional - I don't mind the texture of the skin on cooked apples, so I typically leave the skin on to keep prep easier! But you can peel the apple if you don't like the texture of the skin after cooking.

Ingredients
Apples
- 1 medium-large apple, diced (skin on or off)
- 2 teaspoons all-purpose flour
- 2 teaspoon white granulated sugar
- ⅛-¼ teaspoon ground cinnamon, depending on preference and apple size
Crisp Topping
- 1 tablespoon packed brown sugar, light or dark
- 2 tablespoons melted unsalted butter
- 3 tablespoons all-purpose flour
- 2 tablespoons classic rolled oats
- Pinch salt, omit if using salted butter
Instructions
- Prep - Preheat oven to 350 degrees F. Grease a ramekin with butter (or spray with cooking spray).
- Prep Apples - Toss diced apples with the flour, sugar, and cinnamon. Add to greased ramekin
- Crisp Topping - Mix together the crisp topping ingredients and crumble on top of the apples.
- Bake - Bake for about 35 minutes until the crisp topping is golden, the apples are tender when pierced with a sharp knife, and the juices are starting to bubble. Bake time will depend on ramekin size, the size of apple, and how big your pieces. If the crisp topping is getting brown, I like to place a piece of foil on top to stop the browning.
- Enjoy - Allow to cool slightly (the juices will thicken as it cools) and enjoy!
Notes
Ramekin Size - Pictured is a 10 oz ramekin (when measured to the top rim) that is ~4.25 inches wide. The size of ramekin needed depends on how big your apple is. I've also used a smaller 7-8oz ramekin when using a smaller sized apple. It's okay if it's pretty full as the apples will cook down.
