    Single Serve Chai Spiced Cookie (Small Batch)

    This Single Serve Chai Spiced Cookie recipe is a super small batch cookie recipe that is mixed up in one bowl (no mixer needed). It makes just two chewy sugar cookies that have a chai spice blend not only mixed into the dough, but also in the sugar coating. It is the perfect cozy cookie to enjoy with a cup of tea or coffee on a chilly day.

    ⭐Why I Love It:

    • Chai Spice- Did you know that you can easily make your own Chai Spice Blend with simple pantry spices? I love that we add the chai spice blend to the dough and mix it with some sugar for a snickerdoodle-inspired coating on the outside.     • Small Batch Cookie - I love that this recipe can satisfy my cookie craving, without needing to make an entire batch! I have a large and growing archive of Single Serve Cookie Recipes you should check out!
    • No Mixer Needed - Because it's such a small amount of dough, you can mix it all up by hand using a rubber spatula instead of needing to use an electric or stand mixer.

    🥘Ingredients

    Ingredients to make single serve chai spiced cookies in small glass prep bowls.
    • Unsalted Butter - Softened to room temperature! As long as your butter is softened, then you can easily mix up the dough by hand. If you use salted butter, just omit the amount of salt by half. When measuring the butter, I prefer to cut from the middle of the stick since the tablespoon markers at the ends of the stick can be off. For a small recipe, it's extra important to be accurate with measurements.
    • Brown Sugar - When measuring brown sugar, make sure to pack it into the measuring cup! I typically use light brown sugar for this cookie recipe, but you can also use dark brown sugar.
    • White Granulated Sugar - You'll use it both in the dough and some extra to roll the dough balls in (mixed with the Chai Spice).
    • Egg Yolk - Using only the egg yolk helps keep the recipe super small and it also gives the cookies their chewy center.
    • Vanilla Extract - For flavor!
    • All-Purpose Flour - When measuring flour, make sure to use the 'spoon and level' method. This is where you spoon the flour into the measuring cup and then level off the top. Instead of dipping the measuring cup directly into the flour bin which can lead to over measuring.
    • Baking Soda - This is the leavener for the cookies to help them rise.
    • Kosher Salt - I like the Diamond Kosher Salt. A small amount of salt is so important to balance the sweetness in cookies. If you use table salt, then I would cut the amount by half.
    • Chai Spice Blend - To make the blend from scratch, you'll need Ground Cinnamon, Ground Ginger, Cardamom, Allspice, Nutmeg, Ground Cloves. But if you have a Chai Spice blend on hand, you can swap that in!

    🔪Single Serve Chai Spiced Cookie - Step by Step

    This recipe for Single Serve Chai Spiced Cookies could not be any easier! Just mix up the dough in one bowl, pop in the fridge while the oven preheats, roll in the chai spiced sugar, then bake on one sheet.

    Photo 1 - In a medium bowl, stir together the softened butter and sugars (I like use a rubber spatula to ‘smoosh’ the mixture against the side of the bowl to really cream things together).

    Photo 2 - Mix in the egg yolk and vanilla until well combined. In a small bowl, mix together the chai spice blend and add ½ teaspoon of the mixture to the dough. Set aside the remaining.

    Photo 4 - Mix the remaining chai spice with 1 tablespoon of white sugar. Roll the dough into two balls and roll the balls in the chai spiced sugar and place on the lined baking sheet. I like to sprinkle a little extra sugar on top of each ball.

    Photo 6 - Allow the cookies to cool on the baking sheet for about 10 minutes so they will finish cooking on the sheet and set up the final amount. Enjoy!

    💭Recipe Tips

    • Softened Butter - In order to mix up the dough, your butter needs to be softened to room temperature. If you're in a pinch you can microwave for just a couple of seconds, but be careful not to melt it!
    • Allow to Cool on Baking Sheet - Letting the single serve cookies cool on the baking sheet for 10 minutes lets the cookies finish baking on the warm baking sheet so they set up.
    • Don't Over Bake - The cookies will finish setting up on the baking sheet so in order to have the gooey (but not raw) insides be sure not to over bake them. The egg yolk helps give the center a chewy/fudgy interior so know that as long as they're set around the edges and just set on top then they are baked.
    • Use 'Spoon and Level' Method When Measuring Flour and Cocoa Powder - When measuring flour, make sure to use the 'spoon and level' method. This is where you spoon the flour into the measuring cup and then level off the top. Instead of dipping the measuring cup directly into the flour bin which can lead to over measuring.

    Why does the recipe use only an egg yolk

    Using only the egg yolk helps keep the single serve cookie recipe super small and it also gives the cookies their chewy/fudgy/almost gooey center.     What is the 'Spoon and Level' method?

    The spoon and level method is best for measuring flour because it reduces the risk of over measuring. Start by fluffing up the flour int the container then use a spoon to spoon it into the measuring cup and use a knife to level off the top. This is much more accurate than scooping the flour directly from the container with the measuring cup.

    Ingredients

    Cookie Dough

    • 2 tablespoons unsalted butter, softened to room temperature
    • ½ tablespoon packed light brown sugar, dark can be used
    • 2 tablespoons white sugar (plus 1tbs more for rolling)
    • 1 egg yolk
    • ¼ teaspoon vanilla extract
    • ⅓ cup all-purpose flour, spooned and leveled
    • ¼ teaspoon baking soda
    • ⅛ teaspoon kosher salt

    Chai Spice Blend, divided

    • ½ teaspoon ground cinnamon
    • ⅛ teaspoon ground ginger
    • ⅛ teaspoon cardamom
    • 1/16 allspice
    • 1/16 ground nutmeg
    • 1/16 ground cloves

    Instructions

    1. Prep - Get the oven preheating to 350 degrees F. Line a baking sheet with parchment paper.
    2. Mix Butter and Sugar - In a medium bowl, stir together the softened butter and sugars (I like use a rubber spatula to ‘smoosh’ the mixture against the side of the bowl to really cream things together).
    3. Add Yolk and Vanilla Extract - Mix in the egg yolk and vanilla until well combined.
    4. Chai Spice Blend - In a small bowl, mix together the chai spice blend and add ½ teaspoon of the mixture to the dough. Set aside the remaining.
    5. Add Dry Ingredients - Stir in flour, baking soda, and salt until well combined.
    6. Chill Dough - I like to pop the dough in the fridge for about 15 minutes while the oven finishes preheating.
    7. Roll into Balls - Mix the remaining chai spice with 1 tablespoon of white sugar. Roll the dough into two balls and roll the balls in the chai spiced sugar and place on the lined baking sheet. I like to sprinkle a little extra sugar on top of each ball.
    8. Bake - Bake for 10–13 minutes - until the edges are firm and set and the centers are just set. I like my cookies to have a gooey (not raw) center so they are extra tender, but you can adjust to your preferences.
    9. Cool on Baking Sheet - Allow the Cookies to cool on the baking sheet for about 10 minutes so they will finish cooking on the sheet and set up the final amount. Enjoy!

    Notes

    Chai Spice Blend - You can also use a pre-mixed blend. You'll need ¾ teaspoon total - ½ teaspoon to add to the dough and ¼ teaspoon to mix with sugar coating.
