- Room Temperature Cream Cheese - Make sure to let your cream cheese soften a bit so you an easily blend it together.
- Keep Cream in the Fridge - Unlike the cream cheese, keep the cream in the fridge until ready to use so you can whip it into a whipped cream. A cold heavy cream is much easier to whip.

Ingredients
Graham Cracker Crust
- ¼ cup graham cracker crumbs
- 1 tablespoon salted butter, melted
- ½ tablespoon white granulated sugar
Cheesecake Filling
- 2 ounces cream cheese, softened to room temperature
- 2 tablespoons white granulated sugar
- ½ teaspoon vanilla extract
- ¼ cup heavy cream. Chilled straight from fridge
Instructions
- Graham Cracker Crust - In a small bowl, mix together the crust by mixing the crumbs, melted butter, and sugar. It should have the consistency of wet sand and hold its shape when pressed together, if not, add a tiny bit more melted butter. Press the crust into a large ramekin. Set aside.
- Mix Cream Cheese - In a medium bowl bowl, mix together the cream cheese, sugar, and vanilla until smooth. You can use an electric mixer or rubber spatula to do this.
- Whip Cream - In a separate bowl, whip the chilled heavy cream until stiff peaks form. It’s easiest to do this with an electric mixer but you can do it by hand with a whisk.
- Fold to Combine - Fold the whipped cream into the cream cheese mixture until combined.
- Add Filling and Chill - Pour the filling on top of the graham cracker crust and spread into an even layer. To set up, chill in the fridge for at least 30 minutes or 4-5 hours is even better.
