    This Single Serve No Bake Cheesecake is the ultimate creamy, dreamy dessert - no oven or sharing required. With an easy, buttery graham cracker crust and a 4-ingredient cheesecake filling, it tastes like a classic cheesecake but comes together with just a few ingredients and zero fuss.

    🥘Ingredients

    Ingredients to make an individual no bake cheesecake in small glass prep bowls.
    • Cream Cheese - Make sure this is softened to room temperature. You can use leftover cream cheese to make the cream cheese frosting in this Single Serve Carrot Cake or Single Serve Red Velvet Cake!
    • Vanilla Extract - Adds flavor!
    • Sugar - A little sugar to sweeten the filling and the graham cracker crust.
    • Heavy Whipping Cream - Keep this cold in the fridge until ready to use because you'll whip it up with a hand mixer or whisk to make a whipped cream.
    • Graham Cracker Crumbs - I like to place the graham cracker in a zip top bag and use a rolling pin to crush into crumbs.
    • Melted Butter - This helps hold the graham cracker crust together.

    🍓Variations

    There are lots of easy ways to make a different flavor of single serve cheesecake by adding any of the below to the cheesecake filling!

    • Maraschino Cherry Juice - try mixing in a teaspoon or two to give the dip a pretty pink color and a subtle cherry taste.
    • Chocolate Cheesecake - Try adding about a tablespoon of cocoa powder (adjust to your preference) cup of cocoa powder.
    • Lemon - Add ½-1 teaspoon lemon zest and about a teaspoon of lemon juice for a zesty spin.
    • Strawberry Cheesecake - Mix in a couple teaspoons of strawberry jam to the cream cheese mixture before folding with the whipped cream.

    🔪How To Make a Single Serve No Bake Cheesecake

    This recipe for Single Serve No Bake Cheesecake is easy to mix up in just a few minutes before chilling in the fridge.

    Photo 1 - Mix together the graham cracker crumbs, sugar, and melted butter. It should have the consistency of wet sand.

    Photo 3 - Mix together the cream cheese, sugar, and vanilla. You can do this by hand or with an electric mixer.

    Photo 4 - In a separate bowl, whip the cold heavy cream using either an electric mixer or whisk.

    Photo 5 - Fold the whipped cream into the cream cheese mixture until combined. Be gentle so it still stays fluffy.

    💭Recipe Tips

    • Ramekin Size - I used one large ramekin (10 ounces to the rim and ~4.25 inches wide). This is the large ramekin I use (note - it is labeled as a 7 ounce but it is 10 ounces to the rim). I use the same ramekin to make so many other single serve recipes - like this Single Serve Cosmic Brownie, Single Serve Lemon Pound Cake, or for something savory this Single Serve Cornbread
    • Room Temperature Cream Cheese - Make sure to let your cream cheese soften a bit so you an easily blend it together.
    • Keep Cream in the Fridge - Unlike the cream cheese, keep the cream in the fridge until ready to use so you can whip it into a whipped cream. A cold heavy cream is much easier to whip.

    What can I use instead of a ramekin?

    Since this cheesecake doesn't need to go into the oven, you can really use any similar-sized dish! Other good options are small glass storage rounds or even a medium bowl.

    Ingredients

    Graham Cracker Crust

    • ¼ cup graham cracker crumbs
    • 1 tablespoon salted butter, melted
    • ½ tablespoon white granulated sugar

    Cheesecake Filling

    • 2 ounces cream cheese, softened to room temperature
    • 2 tablespoons white granulated sugar
    • ½ teaspoon vanilla extract
    • ¼ cup heavy cream. Chilled straight from fridge

    Instructions

    1. Graham Cracker Crust - In a small bowl, mix together the crust by mixing the crumbs, melted butter, and sugar. It should have the consistency of wet sand and hold its shape when pressed together, if not, add a tiny bit more melted butter. Press the crust into a large ramekin. Set aside.
    2. Mix Cream Cheese - In a medium bowl bowl, mix together the cream cheese, sugar, and vanilla until smooth. You can use an electric mixer or rubber spatula to do this. 
    3. Whip Cream - In a separate bowl, whip the chilled heavy cream until stiff peaks form. It’s easiest to do this with an electric mixer but you can do it by hand with a whisk.
    4. Fold to Combine - Fold the whipped cream into the cream cheese mixture until combined.
    5. Add Filling and Chill - Pour the filling on top of the graham cracker crust and spread into an even layer. To set up, chill in the fridge for at least 30 minutes or 4-5 hours is even better.
    6. Enjoy!

    Notes

    Ramekin - I used a large (10 ounces to the rim and about 4.25 inches wide) ramekin, but you can use another small dish.

    Storage - Leftovers can be stored, covered, in the fridge for up to 4 days.
