    Single Serve Blackberry Cobbler

    This Single Serve Blackberry Cobbler is the perfect way to enjoy a fruit-filled dessert without making a full pan. Sweet and juicy blackberries are baked under a buttery, biscuit-like topping. It preps in just minutes and is the perfect mini dessert begging to be topped with a scoop of ice-cream.

    • Biscuit Topping - The biscuit-like topping is buttery, flaky and so easy to mix up.
    • Fresh or Frozen Blackberries - Either work great so you can make this mini cobbler year round! Another great single serve dessert using fresh or frozen berries is this Single Serve Blueberry Crisp!
    • Baked in a Ramekin - It makes the perfect individual portion! You can use the same ramekin to make other individual desserts like a Single Serve Red Velvet Cake or Single Serve Peach Crumb Bar.

    🥘Ingredients

    Ingredients to make a single serve blackberry cobbler in small glass prep bowls.
    • Fresh Blackberries - You can also swap in frozen blackberries!
    • White Granulated Sugar - A little sugar is used both to sweeten the blackberries and in the biscuit cobbler topping.
    • Lemon Juice - Adding this to the blackberries adds a bit of brightness!
    • Cornstarch - This helps the juices of the blackberry filling thicken.
    • All-Purpose Flour - When measuring flour, make sure to use the 'spoon and level' method. This is where you spoon the flour into the measuring cup or spoon and then level off the top. Instead of dipping the measuring cup directly into the flour bin which can lead to over measuring.
    • Baking Powder
    • Unsalted Butter - It's important to use cold butter straight from the fridge so it can be 'cut' into the flour mixture.
    • Milk - This is the liquid that helps the biscuit topping come together.
    • Optional - Egg Wash and Sugar - This is optional, but you can beat 1 egg with about a tablespoon of milk to use as an egg wash (this gives a more golden, shiny top). I also like to sprinkle with course sugar to give a crunchy top.

    🔪How To Make a Single Serve Blackberry Cobbler

    This recipe for Single Serve Blackberry Cobbler mixes up in just minutes and is ready in under 30 minutes!

    Photo 1 - Toss the blackberries with the sugar, lemon juice, and cornstarch until coated. Pour into greased ramekin.

    Photo 2 -  In a medium bowl, whisk together the flour, sugar, baking powder, salt. Add the cold, cubed butter and cut into the flour using a pastry cutter or fork. You want the mixture to be a mix of small and slightly larger (pea-sized) crumbs).

    Photo 3 - Add the milk and mix until combined. The dough should come together and be a similar consistency to a sticky biscuit dough.

    Photo 4 -  Press the cobbler dough into a disc about the size of the ramekin and place on top of the blackberries.

    What is the 'Spoon and Level' method?

    The spoon and level method is best for measuring flour because it reduces the risk of over measuring. Start by fluffing up the flour int the container then use a spoon to spoon it into the measuring cup and use a knife to level off the top. This is much more accurate than scooping the flour directly from the container with the measuring cup.

    Can this recipe be made gluten-free?

    Yes! To make a gluten free mini cobbler just swap in a 1:1 Gluten-Free Flour Blend.

    Can I swap in frozen blackberries?

    I prefer fresh, but you can swap in frozen berries. The bake time may vary slightly so bake until the juices are bubbling and the topping is golden.

    Can I use other berries in this cobbler recipe?

    Absolutely! Blueberries, raspberries, or even a mix of berries would be amazing.

    Ingredients

    Blackberries

    • ⅔-¾ cup fresh blackberries, depending on blackberry and ramekin size
    • 2 teaspoons white granulated sugar
    • ½ tablespoon lemon juice
    • ½ teaspoon cornstarch

    Cobbler Topping

    • ¼ cup all-purpose flour, spoon and level method
    • 1 tablespoon white granulated sugar
    • ¼ teaspoon baking powder
    • Pinch of kosher salt
    • 1 tablespoon cold unsalted butter, cubed into small pieces
    • 1 tablespoon milk, whole or 2% preferred
    • Optional Egg Wash - 1 egg beaten with 1 tablespoon milk
    • Optional - Course Sugar - for topping

    Instructions

    1. Prep - Preheat oven to 350 degrees F. Grease a large ramekin (~10 ounces to the rim, ~4.25 inches in diameter) with butter (or spray with cooking spray).
    2. Prep Blackberries - Toss the blackberries with the sugar, lemon juice, and cornstarch until coated. Pour into greased ramekin.
    3. Cobbler Topping - In a medium bowl, whisk together the flour, sugar, baking powder, salt. Add the cold, cubed butter and cut into the flour using a pastry cutter or fork. You want the mixture to be a mix of small and slightly larger (pea-sized) crumbs). Add the milk and mix until combined. The dough should come together and be a similar consistency to a sticky biscuit dough. If the mixture is too dry, you can add just a tiny bit more of milk (start with only ¼-1/2 teaspoon) to help it come together.
    4. Add Topping - Press the cobbler dough into a disc about the size of the ramekin and place on top of the blackberries. If using, you can brush with an egg wash for a shinier end result and/or sprinkle with some course sugar to give a crispy topping.
    5. Bake - Bake in the preheated oven for about 20-25 minutes until the cobbler topping is golden brown and there is bubbling around the edges. If your cobbler topping is getting too dark, you can loosely place a piece of foil over the top.
    6. Enjoy - Allow to cool slightly (the juices will thicken as it cools) and enjoy!
