    Single Serve Peach Crumb Bar

    This Single Serve Peach Crumb Bar is the perfect mix of buttery, crumbly goodness and a sweet, jammy, peach filling. It's all baked in a large ramekin, making it the perfect single serve treat to make during peach season.

    ⭐Why I Love It:

    • Buttery, Crumb Dough - The simple dough is made with just a few staple ingredients and is mixed up in a bowl by hand. It's used for both the crust on the bottom and crumbled on top!
    • Fresh Peach Filling - I love any excuse to bake with fresh peaches! For another favorite summer fruit dessert, try this Single Serve Blueberry Crisp or Single Serve Lemon Bar.
    • Baked in a Ramekin - It makes the perfect portion to serve just 1 or 2 people.

    🥘Ingredients

    Ingredients to make an individual peach crumb bar in small glass bowls.
    • Fresh Peach - This is the perfect recipe to make for peach season! You only need 1 small-medium peach for this recipe. The skin is optional. I often leave it on to keep it easy but you can peel the peach if you like.
    • Brown Sugar - When measuring brown sugar, you want to pack it into the measuring cup. I used light brown sugar, but you can use dark brown sugar as well.
    • All-Purpose Flour - A little bit is added to the cooked peaches to thicken in addition to using flour to make the crumb dough. When measuring flour, make sure to use the 'spoon and level' method. This is where you spoon the flour into the measuring cup or spoon and then level off the top. Instead of dipping the measuring cup directly into the flour bin which can lead to over measuring.
    • Ground Cinnamon - Just a pinch of cinnamon adds the best spiced flavor to the peaches, but you can omit if you prefer.
    • Unsalted Butter - If you use salted butter, just add about half the salt. When measuring the butter, I prefer to cut from the middle of the stick since the tablespoon markers at the ends of the stick can be off. For a small recipe, it's extra important to be accurate with measurements.
    • Vanilla Extract - Adds the best flavor to the crumb topping dough.
    • Kosher Salt - I like the Diamond Kosher Salt. A small amount of salt is so important to balance the sweetness.

    🔪How To Make a Single Serve Peach Crumb Bar

    This recipe for Single Serve Peach Crumb Bar layers a homemade peach filling between a buttery crumb topping and crust.

    Photo 1 - Add about ⅔-3/4 of the sliced peaches, the brown sugar, flour, and cinnamon to a small skillet or small pot. Cook on medium-low heat, stirring frequently. The goal is to break down the peaches and form a jammy texture.

    Photo 2 - Remove from heat and add the reserved sliced peaches and combine. Set aside.

    Photo 3 - In a medium bowl, use a rubber spatula to combine the softened butter, brown sugar, and vanilla.

    💭Recipe Tips

    • Add Parchment Circle - Make sure to really well grease your ramekin so you can remove the bar after baking. It's technically optional, but I also like to add a circle of parchment, cut to size, paper to the bottom of the ramekin to ensure easy removal!
    • Ramekin Size - I used one large ramekin (10 ounces to the rim and ~4.25 inches wide) but you can use a bigger ramekin or two smaller ramekins and just adjust the bake time. This is the large ramekin I use (note - it is labeled as a 7 ounce but it is 10 ounces to the rim). You can use the same ramekin to make my favorite Single Serve White Cake or Single Serve Chocolate Cake.
    • Use 'Spoon and Level' Method When Measuring Flour - When measuring flour, make sure to use the 'spoon and level' method. This is where you spoon the flour into the measuring cup and then level off the top. Instead of dipping the measuring cup directly into the flour bin which can lead to over measuring.

    What is the 'Spoon and Level' method?

    The spoon and level method is best for measuring flour because it reduces the risk of over measuring. Start by fluffing up the flour int the container then use a spoon to spoon it into the measuring cup and use a knife to level off the top. This is much more accurate than scooping the flour directly from the container with the measuring cup.

    Do I need to peel the peach to make the crumb bar?

    Peeling is optional! I often skip it, because I want to keep things easy and I like the texture of it but you can peel the peach if you want a smoother filling.

    Can this recipe be made gluten-free?

    Yes! To make a gluten free peach crumb bar, just swap in a 1:1 Gluten-Free Flour Blend.

    Can I swap in frozen peaches?

    I prefer fresh, but if fresh peaches aren't available you can swap in frozen peaches. You'll want to thaw the frozen peach slices first before proceeding with the recipe. The cook time for making the filling on the stove may vary, so go by texture not time.

    Ingredients

    Peaches

    • 1 small-medium peach, pitted and sliced into ~¼ inch slices. Skin is optional
    • 1 tablespoon packed brown sugar, light or dark
    • ½ teaspoon all-purpose flour
    • Pinch of ground cinnamon

    Crumb Dough

    • 2 tablespoons unsalted butter, softened to room temperature
    • 1.5 tablespoons packed brown sugar, light or dark
    • ½ teaspoon vanilla extract
    • 5 tablespoons all-purpose flour
    • ⅛ teaspoon baking powder
    • Pinch of kosher salt

    Instructions

    1. Prep - Preheat oven to 350 degrees F. Grease a large ramekin (10 ounces to rim and 4.25 inches wide) with butter (or spray with cooking spray). I also like to add a circle of parchment paper to bottom for even easier removal.
    2. Cook Peaches - Add about ⅔-3/4 of the sliced peaches, the brown sugar, flour, and cinnamon to a small skillet or small pot. Cook on medium-low heat for about 10 minutes, stirring frequently. The goal is to break down the peaches (you can start to squish them down as they cook) and form a jammy texture. Remove from heat and add the reserved sliced peaches and combine. Set aside.
    3. Crumb - In a medium bowl, use a rubber spatula to combine the softened butter, brown sugar, and vanilla. Once combined, add in the flour, salt and baking powder to form a thick smooth dough.
    4. Assemble - Press about ⅔ of the crumb mixture into the bottom of the ramekin to form the crust. Add the peach mixture on top then crumble over the remaining crumb in a mix of large and small clumps.
    5. Bake - Bake in the preheated oven for 27-30 minutes until the peaches are bubbling and the crumb topping is golden brown.
    6. Enjoy - Allow to cool before removing from the ramekin and enjoying.
