Can these be prepped in advance?
Definitely! You can wrap the asparagus with the prosciutto up to a day in advance and then keep in the fridge. Then just bake right before serving.
How do you trim Asparagus?
The ends of asparagus can be tough and woody. Most recipes will call for trimming the ends. Not sure how much to trim? Snap it! Hold a spear on each end and bend to the point it breaks. It will snap at the right point.
You can either do this to each one, or I like to do one to use as a guide and then use my knife to cut through all at once.
But what about the ends? You don't need to throw them away! I like to save the ends for making homemade stock. Just keep a bag of veggie scraps in your freezer until you have enough.
How long will leftovers last?
This recipe is best served immediately.
Leftovers can be stored in the fridge in an airtight container for 3-4 days. Be aware that they will lose their crispness.
How thick should the asparagus spears be?
For this prosciutto wrapped asparagus recipe, I prefer to use medium-thick spears. This way it's a good prosciutto to asparagus ratio vs being all meat.
If you only have super thin asparagus, you can also make bundles with 2-3 of them wrapped together.

Ingredients
- 6 ounces sliced Prosciutto
- 1 pound Asparagus, ends trimmed
- 1 tablespoon Olive Oil
- Ground Black Pepper
- Freshly grated Parmesan Cheese, optional
- Lemon Zest, optional
Instructions
- Preheat Oven. Preheat oven to 400°F. Line a sheet pan with parchment paper.
- Prepare Ingredients. Trim the tough ends off of the asparagus. Take the prosciutto slices and cut in half horizontally so you have long strips to wrap.
- Wrap Asparagus. Wrap each asparagus tightly with a piece of prosciutto. Place on the prepared baking sheet with a little room between each one. Drizzle with the olive oil and sprinkle with black pepper.
- Bake. Bake in the preheated oven for 8-10 minutes until the asparagus are bright green, tender yet firm, and can be pierced easily with a fork.
- Finish and Serve. Sprinkle with parmesan and lemon zest, if using. Serve and enjoy!
Notes
The asparagus can be wrapped up to a day in advance, stored in the fridge, and then baked right before serving.
