Making this Overnight French Toast is so simple! It's way easier than flipping a giant batch of regular French toast.
Just layer the bread cubes with strawberries and cubed cream cheese then pour over the egg/milk mixture. Allow to sit and then bake!

How long does the casserole need to sit for?
I recommend at least two hours so the bread can soak up the egg mixture. But you can even pop it in the fridge overnight for the easiest breakfast in the morning.
Can I use something other than strawberries?
Absolutely!

- Or a combination of berries!
What is the best bread to use for the French toast?
I don't recommend using thinly sliced, or overly soft bread as it won't hold up in the egg mixture - such as sandwich bread. My favorite is using a brioche type bread - it's soft, sweet, and thick.
Brioche and Challah are my favorite! I prefer to buy the loaf uncut if possible so I can control the size of the bread cubes.
What type of baking dish should be used?
This recipe was tested and developed using a 9x13 baking dish, glass or ceramic. You could also use multiple smaller baking dishes but the bake time will vary.
Leftovers? How long do they last? Can it be frozen?
Leftovers can be stored in the fridge, tightly wrapped for 3-4 days. The French toast casserole will become softer as it sits.
Slices can be frozen - tightly wrapped in plastic wrap then foil - for 2 months. The strawberries will lose some of their integrity from the freezing.
I recommend reheating the slices in the oven vs the microwave to crisp up the edges.

Ingredients
- 1 16oz loaf of Brioche Bread, cubed
- 8oz Cream Cheese, cubed
- 16oz Strawberries, chopped and divided
- 12 large Eggs
- 2 cups Whole Milk
- ⅓ cup Pure Maple Syrup
- 1 ½ teaspoons Vanilla Extract
- ½ teaspoon Kosher Salt
- Toppings: Powdered Sugar, Extra Maple Syrup
Instructions
- Prepare the Dish. Spray a 9x13 baking dish with nonstick spray.
- Layer. Layer half of the bread cubes evenly in the prepared dish. Top with ½-2/3 of the chopped strawberries and all of the cubed cream cheese. Layer on the remaining bread cubes to cover the strawberries and cream cheese.
- Mix the Egg Mixture. In a medium bowl, whisk together the eggs, milk, maple syrup, vanilla, and salt until combined. Pour evenly over the layers.
- Cover and Set Aside. Cover the baking dish and refrigerate for at least 2 hours or overnight.
- Preheat Oven. Preheat oven to 350 F. While the oven is preheating, remove the baking dish from the refrigerator.
- Bake. Bake, covered with foil for 30 minutes. Remove foil and bake for additional 25-30 minutes until the center is firm and set (no jiggle) and the top is golden brown.
- Serve. Serve sprinkled with powdered sugar and remaining strawberries. Enjoy!
