- Packaged Muffin Mix - You can use any variety! My favorite to use is either blueberry muffin mix or chocolate chip muffin mix.
- Milk - You can use any milk to make this recipe, I prefer to use either whole milk or low fat milk for the best flavor.
- Eggs - These are an important binder and help make the pancakes fluffy! I like to grab some extra eggs to fry up on the Blackstone to serve with the pancakes.

When serving these Blackstone Muffin Mix Pancakes, I like to set out different toppings such as fresh berries, extra butter, maple syrup, and whipped cream.
To round out the pancake breakfast, I like to cook up some breakfast sides when I already have the griddle turned on. Some favorite Blackstone breakfast sides are bacon, breakfast sausages, and eggs.
🔪Step by Step Instructions
Photo 1 - Start by getting your Blackstone griddle preheating on LOW. In a medium mixing bowl, mix together the eggs and milk with a fork or whisk.
Photo 2 - Mix in the muffin mix. If the batter doesn't have a pancake batter consistency, you can add another splash of milk.
Photo 3 - Lightly grease your preheated Blackstone griddle. Pour about ⅓ cup of the batter onto griddle. Cook until the edges start to firm and bubbles form on the top. Flip and cook for another minute or two until cooked through and golden brown on both sides.
Photo 4 - I like to place a small wire rack on a corner of the griddle and stack the cooked pancakes on top to keep warm while I cook the rest of the pancakes.
💭Recipe Tips
- Using a different sized muffin mix package? Packaged muffin mix is typically sold in either a 7oz package or 15-17oz box, I include the measurements for both sizes in the recipe card at the bottom of the post.
- Make on the stove inside? If a rainy day ruined your outdoor plans and you can't make pancakes on the Blackstone, these can easily be made in a large skillet on the stove. See the recipe card for more details!
- Don't Over Mix - When mixing the batter, you want to mix until just combined and mostly smooth. If you over mix the batter then the pancakes won't be as soft and fluffy.
- Keep Warm in the Oven or on the Blackstone - I like to place a small wire rack in the corner of my Blackstone griddle and add the cooked pancakes on top so they stay warm while I finish cooking the rest. If you're making the pancakes inside, then you can keep warm on a wire rack lined baking sheet in a low temp oven (~200 degrees F).

Once bubbles are forming on the top, the pancakes should be ready to flip. bottom and it should be nice and golden brown. If the bottom is getting too dark before bubbles are forming, turn down your heat.

Ingredients
- 15-17oz package muffin mix, I like using blueberry or chocolate chip
- 1.5 cups milk, I like using whole fat or low fat milk
- 2 eggs
- Oil, to grease Blackstone griddle
Instructions
- Preheat Blackstone Griddle - Preheat your griddle to LOW heat. The temperature should be 300-350 degrees F.
- Mix Batter - In a medium mixing bowl, mix together the eggs and milk with a fork or whisk. Mix in the muffin mix. If the batter doesn't have a pancake batter consistency, you can add another splash of milk.
- Cook Pancakes - Lightly grease your preheated Blackstone griddle (make sure the griddle isn't too hot!). Pour about ⅓ cup of the batter onto griddle. Cook until the edges start to firm and bubbles form on the top. You can also peek under the pancake to see if it is golden brown. When ready, flip and cook for another minute or two until cooked through and golden brown on both sides.
- Repeat - I like to place a small wire rack on a corner of the griddle and stack the cooked pancakes on top to keep warm while I cook the rest of the pancakes.
- Serve and Enjoy - Serve with your favorite pancake toppings like maple syrup, whipped cream, and fresh berries or chocolate chips.
Stovetop Variation
- Cook on the Stove - Preheat a nonstick skillet or griddle over low heat and add a little butter or oil to grease. Once hot, add about ⅓ cup of the batter and spread into a circle. Cook until until the edges start to firm and bubbles form on the top. You can also peek under the pancake to see if it is golden brown. When ready, flip and cook for another minute or two until cooked through and golden brown on both sides.
- Repeat - I like to set pancakes on a wire rack on a baking sheet in a low temp oven to keep warm while I make them all.
Notes
For a 7oz Package of Muffin Mix - Use 1 egg and ~⅔ cup milk.
Servings - This recipe makes about 12 4-inch pancakes which is enough to feed 4 adults.
