- Fresh Grape Tomatoes
- Garlic Cloves
- Olive Oil
- Spices - Salt, Pepper, Dried Oregano
- Burrata - Burrata is similar to fresh mozzarella but is filled with cream. It is also amazing in this Prosciutto Burrata Pasta with Peas.
- Fresh Basil
- Balsamic Glaze - You can buy this at your grocery store or make your own by reducing balsamic vinegar.
- Baguette or Crostini - Sliced for serving
How to Make Roasted Tomatoes with Burrata
- Prep - Preheat the oven to 400 degrees F. In a small shallow baking dish, like the one pictured, toss the grape tomatoes with the olive oil, sliced garlic, and spices. Make sure the tomatoes are evenly coated and spread into an even layer
- Roast - Roast the tomatoes for 30 - 40 minutes until the tomatoes are bursting and a little charred. Allow to cool for 5-10 minutes (or longer, if you'd like).
- Finish - Nestle the balls of burrata into the tomatoes and drizzle the whole thing with balsamic vinegar and sprinkle with sliced basil or nestle some basil leaves in the tomatoes.
- Serve - Serve with crostini or sliced baguette.
Make Ahead and Storage Tips
- Make Ahead - The tomatoes can be roasted a day or two in advance. You can then let them come up to room temperature, or gently warm up in the oven before finishing with the burrata, balsamic glaze, basil, and serving.
- Leftovers and Storage - The leftover roasted tomatoes can be stored in the fridge, in an airtight container, for up to 5 days. The burrata does not store as well - especially after it bursts - just store with the burrata for a day or two.
Recipe Tips
- Serve Warm or At Room Temperature - After roasting the tomatoes, you can either serve it right away with the burrata or you can set it aside and serve it a little later. Wait to add the burrata and drizzle with the balsamic glaze until right before serving.
- Easily Double or Half the Recipe - This recipe is super easy to make a smaller or larger batch. You'll need to adjust your baking dish size and keep an eye on the cook time (roast until the tomatoes are bursting and a little charred).
Frequently Asked Questions
Nope! The skin on grape tomatoes becomes super tender from roasting.
I do not recommend swapping in canned tomatoes. Canned tomatoes will have a different texture and more moisture. It's best to use fresh, ripe tomatoes.

Ingredients
- 2 pints grape tomatoes
- 2 large garlic cloves, thinly sliced
- 3 tablespoons olive oil
- ½ teaspoon dried oregano
- Pinch of Salt and Pepper
- 8oz Burrata
- 1-2 tablespoons Balsamic Glaze
- Fresh Basil, for garnish
- Sliced Baguette or Crostini, for serving
Instructions
- Prep - Preheat the oven to 400 degrees F. In a small baking dish toss the tomatoes with the garlic, dried oregano, salt and pepper, and olive. Toss to evenly coat then spread into an even layer.
- Roast - Roast in the preheated oven for 30-40 minutes until the tomatoes are starting to burst, and some have lightly charred edges. Remove from the oven and allow to cool for 5-10 minutes.
- Finish - When ready to serve, nestle the burrata in the roasted tomatoes, drizzle with balsamic glaze, and garnish with the fresh basil (either whole leaves or thinly sliced).
- Serve - Serve with baguette slices or even store-bought crostini.
