Ingredients and Equipment
- Sliced Bread - Use a hearty artisan or sourdough bread for best results
- Softened Butter - To spread on the bread slices before cooking
- Brie Cheese - You'll thinly slice it. I also like using brie cheese in this fruit charcuterie board or in this Baked Brie with Jam recipe.
- Apple - You can skip this, but I love the added texture!
- Prosciutto - This is also optional but it pairs perfectly with the brie.
- Skillet - I like to use a cast iron skillet, but any skillet will do.
Step by Step Instructions
- Butter Bread - Butter one side of two slices of bread with the softened butter.
- Layer Sandwich - Add a layer of brie cheese slices to the non-buttered side of a slice of bread, top with the apple slices, prosciutto, and a drizzle of honey, if using. Add the second piece of bread, butter-side up.
- Cook Grilled Cheese - Heat up a skillet to medium heat (medium-low if your burners run hot) and add the sandwich, butter side down. Cook for 3-4 minutes until the bread is golden brown then carefully flip it over. I like to add a lid at this point and cook for 1-2 more minutes so they other side gets golden brown and the cheese melts fully.
- Enjoy - Allow to cool for just a minute then cut in half and enjoy!
Substitutions
- Other Cheese - You can swap in another melting cheese like Havarti, American, and more!
- Mayo for the Butter - I prefer to make grilled cheese with butter, but I know many people love to spread mayonnaise on the bread slices instead.

While a Brie Grilled Cheese is great on its own, I love to level up by adding a few of the below add-ins to the sandwich:
- Prosciutto Slices
- Leftover Shredded Turkey
- Cranberry Sauce
- Shredded Chicken
- Thinly Sliced Apples
- Thinly Sliced Pears
- Jam
- Honey
- Arugula
Leftovers and Storage
Although any grilled hot sandwich is best served immediately, you can store leftovers in the fridge for up to 4 days. I recommend removing the apple slices so they don't brown. You can eat the sandwich cold from the fridge, or reheat in a skillet on the stove.
Recipe Tips
- Cook over Medium - In order to give time for the cheese to melt without burning the outside of the bread, it's best to cook a grilled cheese over medium (even medium-low if your stove runs hot).
- Using a lid - Using a lid at the end will help make sure the cheese is fully melted.
- No Need to Remove the Rind - I know that not everyone likes to eat the brie rind/skin when served cold on a cheese board, but in the grilled cheese it melts into the rest of the cheese so it's not noticeable.

Frequently Asked Questions
If you want to add other cheese to pair with the brie, a mild flavored cheese like mozzarella or havarti pair well so that the flavor of the brie still shines through.
The brie skin or rind can be eaten! The rind protects the soft cheese and adds a slight earthy flavor. When brie is eaten cold or room temperature, some do prefer to cut off the rind but when the brie is warmed and melted the rind melts right in.
Brie can be eaten cold (although at least room temperature is recommended), but it is a great cheese to heat up and melt! It melts into a creamy, gooey texture.
