Ingredients Needed
- Sweet Potatoes
- Cornstarch - this is the secret ingredient!
- Garlic Powder, Salt, and Pepper
- Olive Oil
- Flaky Salt and Fresh Parsley - optional, for sprinkling on top
Step by Step Instructions
- Preheat Oven. Preheat oven and spray a baking sheet with cooking spray.
- Prepare Fries. In a small bowl, mix together the cornstarch, garlic powder, salt, and pepper. In a large bowl, toss the cut sweet potatoes with the cornstarch mixture until evenly coating. Drizzle in the olive oil and toss again.
- Spread Fries on Sheet. Spread the coated fries evenly on the baking sheet - make sure they are not overlapping or touching. Use a second sheet, if needed. This is key to making them crispy - overcrowding will cause them to steam and they won't get crisp.
- Roast the Fries. Bake the fries in the preheated oven for 10 minutes. Carefully flip fries over and bake again for about 10 more minutes - depending on thickness. They are done when they are tender, crispy, and matte looking.
- Serve and Enjoy. If desired, sprinkle on course salt and fresh parsley. Enjoy!
Tips and FAQs!
How long do they last?
Leftover fries will lose their crispness. I recommend eating them immediately after baking.
But, if you do have leftovers that you want to reheat, I recommend reheating in the oven or an air fryer vs the microwave. You can drizzle on a little more oil before baking again to help crisp them back up.
Do the potatoes need to be soaked?
Nope! Although soaking potatoes is necessary in some recipes to remove the starch, it's not needed here.
The cornstarch is all that's needed to give them that crispy outer layer.
What makes the fries crispy?
A few key things.
- The cornstarch! It provides a crispy outer layer. You toss the cornstarch first, otherwise it clumps with the oil.
- Don't overcrowd the pan. You want to lay the fries in an even layer without them touching. If they're too crowded, they will steam instead of roast and get crispy. Use a second pan if you need.
- The temperature of the oven. A lower temp won't get them as crispy, but a higher temp would cause them to burn before cooking through.

Notes
Fry Shape: You can cut the fries into your preferred thickness (baking time will be impacted) but make sure they are cut evenly so they cook evenly.
Leftovers: The fries are best served immediately after baking, but leftovers can be stored in the fridge for 3 days. To reheat, I recommend using the oven or an air fryer to crisp them back up.
