Pick up an affordable chuck roast and use a few simple ingredients to turn it into tender and juicy shredded beef.
- Boneless Chuck Roast - You'll cut it into a few large chunks so that it cooks faster
- Spices - Italian Seasoning, Onion Powder, Garlic Powder, Red Pepper Flakes, Salt and Pepper
- White or Yellow Onion
- Low-Sodium Beef Broth
- Pepperoncini Peppers - From a glass jar. You'll use the peppers and a little bit of the juice
- For Making into Sandwiches - Hoagie Buns or Rolls, Provolone Slices, Giardiniera
Substitutions and Variations
- No Pepperoncini Peppers? If you don't have or don't want to use the pepperoncini peppers, you'll want to add something else to give it tang. You can use ¼ cup of the brine from the jar of giardiniera if you're using that for serving or even ¼ cup of white vinegar.

Step by step instructions
This recipe for Instant Pot Shredded Beef is so easy! Just add the ingredients to the Instant Pot (not browning needed) and pressure cook. The entire recipe is under 2 hours including letting the Instant Pot come to pressure and releasing the pressure.
- Prep - Start by cutting the chuck roast into 3 big pieces and dicing up the onion.
- Add to Instant Pot - Add the chuck roast pieces to the instant pot and sprinkle over the spices. Give the chuck roast a couple flips to coat in the spices then add the remaining ingredients.
- Pressure Cook - Cook on manual high pressure then natural release for about 15 minutes (let it sit) before quick releasing the remaining pressure.
- Shred Beef - Remove the chuck pieces to a plate and shred with two forks. The meat should easily shred and fall apart.
- Toast Rolls (Optional) - If serving as sandwiches, split the rolls open and add 1-2 slices of provolone cheese. Pop under the broiler heated to Low for a couple of minutes to melt the cheese and toast the bun.
- Assemble Sandwiches - Pile in the shredded beef, drizzle over some of the juice, and top with giardiniera. You can serve with a bowl of the broth for dipping as well.
Leftovers and Storage
Leftover shredded beef can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months. I like to reheat leftovers either in the microwave, in a pan on the stove, or in a slow cooker on LOW.
Frequently Asked Questions
Using a cut of beef that has a higher fat content will result in more tender, shredded beef. A chuck roast shreds well as does a rump roast or brisket.
A good rule of thumb is that it takes about 20 minutes per pound of meat. Cutting the meat into smaller chunks helps lower the cook time. So a 3 pound chuck roast will take 50-60 minutes.

- 3 pound boneless chuck roast
- 2 teaspoons Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder

- Pressure Cook - Set the Instant Pot lid to 'sealing' and cook on manual high pressure for 55 minutes. Natural release the pressure (let it sit) for 15 minutes then quick release the remaining pressure.
- Shred Beef - Remove the chuck pieces to a plate and shred with two forks. The meat should easily shred and fall apart.
- Toast Rolls (Optional) - If serving as sandwiches, split the rolls open and add 1-2 slices of provolone cheese. Place on a sheet pan and pop under the broiler heated to Low for a couple of minutes to melt the cheese and toast the bun. Keep an eye on the rolls while under the broiler so they don't burn.
- Assemble Sandwiches - Pile in the shredded beef, drizzle over some of the juice, and top with giardiniera. You can serve with a bowl of the broth for dipping as well.
