    Pomegranate Brussels Sprout Salad

    Pomegranate Brussels Sprout Salad is such an easy, yet festive, holiday side dish. Use pre-shredded or shaved Brussels sprouts to make the prep even easier. Parmesan cheese, candied walnuts, pomegranate arils, and an easy lemon dressing to toss it all together.

    What You'll Need for this Recipe:

    The ingredient list for this recipe is short! You can find all the ingredients at pretty much any grocery store - even all at Trader Joe's!

    • Shredded or Shaved Brussels sprouts - I used the ones in a bag from Trader Joe's
    • Candied Walnuts - or other nut. Pecans are also a great choice!
    • Shaved Parmesan Cheese
    • Pomegranate Arils
    • Lemon Dressing - Lemon Juice, Olive Oil, Dijon Mustard, Honey, Salt and Pepper

    One of my favorite things about this recipe is that there is NO COOKING REQUIRED. It's perfect for Thanksgiving, Friendsgiving, Christmas, or other holiday meal when oven and stove space is in high demand. It's also great if you're not the host and want a dish to mix up when you arrive at the party.

    Tips and FAQs!

    Can I prep it in advance?

    Absolutely! But I recommend waiting to toss it all together with the dressing until before serving. But you can mix up the dressing and prep the other ingredients. The prep doesn't take long because you can buy them all pre-prepared from the store!

    How long do the leftovers last?

    Because the shaved Brussels are tossed with a dressing, the salad is best eaten immediately after tossing. But, leftovers can be stored in an airtight container in the fridge for a day or two. It will lose its crispness as it sits.

    I have whole Brussels Sprouts, how do I shave them?

    I love buying pre-shredded or shaved sprouts for the convenience, but you can absolutely do it yourself!

    • My first choice is to use the slicing disc on a food processor. You'll be able to shave an entire pound in just seconds.
    • If that is not an option, you can use a mandoline. Be very very careful to not cut your fingers. I highly recommend buying a pair of cut resistant gloves and use the mandoline's guard. You can slice the sprouts on the thinnest setting.
    • Finally, you can use a very sharp knife to slice them as thinly as possible.
    • You can shred the Brussels sprouts up to 2 days in advance and store them in an airtight container in the fridge.

    What do raw Brussels sprouts taste like?

    While brussels sprouts are often served roasted or sautéed, you can absolutely eat them raw! They have such a nice crunch and are great in salad recipes like this one. I find them similar to sliced cabbage. Like cabbage, they hold up very well and keep their crunch and texture.

    What can I substitute for the candied walnuts?

    I love the sweetness and crunch that the candied walnuts add. If you want less sugar, you can use regular walnuts instead. Pecans or candied pecans are a great substitution.

    Ingredients

    Salad Ingredients

    • 1lb shredded Brussels Sprouts
    • ⅔ cup Pomegranate Arils
    • ⅔ cup Candied Walnuts, roughly chopped
    • ½ cup shaved Parmesan Cheese

    Lemon Dressing

    • ¼ cup Olive Oil
    • 3 tablespoons Lemon Juice
    • 1 teaspoon Dijon Mustard
    • 1 teaspoon Honey
    • Salt and Pepper

    Instructions

    1. Mix Dressing. Either by shaking in a jar or whisking in a bowl, mix up the Lemon Dressing ingredients. Season with a heavy pinch of salt and pepper, to taste.
    2. Toss Salad. In a large bowl, toss the salad ingredients together and toss in the dressing to taste (depending on your preference, you may not use all the dressing). I like to reserve a few pomegranate arils, walnuts, and parmesan pieces to sprinkle on top.
    3. Serve and Enjoy. Best served soon after tossing. 

    Notes

    Leftovers: The salad is best eaten immediately after making. Leftovers can be stored in an airtight container in the fridge for 1-2 days, but it will become soft and soggy as it sits.
