Sheet Pan Shrimp Fajitas are so easy to make and super flavorful! Toss shrimp, onions, and peppers with fajita seasoning then cook all together on a sheet pan in the oven. Ready in under 30 minutes and perfect for a busy weeknight dinner.
I love serving fajitas with rice or even cilantro lime rice by mixing cooked white rice with fresh lime juice, chopped cilantro, and a pinch of salt. Refried beans or cooked and seasoned black beans are another great side as is this Black Bean Salsa .

- Raw Shrimp - Use large shrimp that are peeled and deveined. The tails are optional.
- Bell Peppers - I like to use one red, one orange, and one yellow.

- Fajita Fixings - Tortillas, Cilantro
Step by step instructions
Making Shrimp Fajitas on a sheet pan is so easy and requires little clean up!
- Prep - Start by preheating the oven and slicing up the peppers and onions.
- Season Peppers and Onions - Add the sliced peppers and onions to a large sheet pan, drizzle over the oil and 1 tablespoon of the fajita spices, and toss everything to combine. Make sure everything is evenly coated.
- Bake Peppers and Onions - Spread it all out on the pan and bake in the oven for about 10 minutes until they veggies are starting to soften.
- Add Shrimp - In a medium bowl, toss together the shrimp with oil and the remaining fajita seasoning. Push the peppers and onions to one half of the pan and add the shrimp to the other half in an even layer.
- Bake Shrimp - Return pan to the oven and cook for an additional 5-7 minutes (depending on size of shrimp) until the shrimp are fully cooked (opaque and pink).
- Serve - Serve with warmed tortillas and your favorite toppings!
Homemade Fajita Seasoning
While you can buy a fajita spice blend at the store, it's super easy to make at home! Follow this fajita seasoning mix recipe to make a small batch of the spice blend to use and have on hand. - Chili Powder
- Ground Cumin
- Paprika or Smoked Paprika
- Garlic Powder
- Onion Powder
- Salt and Pepper
- Ground Cayenne Pepper - this can be adjusted or even omitted to your preference

Recipe Tips:
- Cook Peppers and Onions First - The shrimp cook very quickly so that's why it's important to cook the peppers and onions first before adding the shrimp to finish.
- Don't Crowd the Pan - Use a large, regular-sized sheet pan for this recipe. But if you decide to double it, then you'll want to use a second pan. Giving the peppers and onions room on the pan results in them roasting vs steaming.
