Greek Chickpea Salad
As the weather warms up, I’m looking to spend less time standing over a hot stove or oven and more time outside soaking in the vitamin D (preferably with a glass of wine in hand). This recipe solves this need. Just some slicing and dicing and a quick toss together and this salad is good to go. Filled with healthy, filling, fresh ingredients. The best part? You don’t have to worry about anything getting soggy, it’s actually better once it sits for a bit, so go ahead and make this to eat throughout the week. I love serving mine alongside some grilled meat for dinner or mixing some with a can of tuna for an easy lunch.
