It only takes a few simple ingredients to make crispy, crunchy, cheesy potatoes in your air fryer. Here's what you need:
- Potatoes - I prefer to use russet potatoes. Russets can also be used in this recipe for Hasselback Potatoes or Air Fryer Baked Potatoes.
- Olive Oil - You can use another oil of choice such as canola oil or vegetable oil.
- Spices - Garlic Powder, Salt, Pepper
- Grated Parmesan Cheese - I often use the kind in a can! If you use fresh, make sure it's grated finely. The key is for it to form a crunchy coating on the potatoes.

🔪Step by Step Instructions
Making parmesan potatoes in the air fryer is so easy. Just toss the potatoes with a little oil, spices, and parmesan. See the instructions below:
Photo 1 - Wash and dry your potatoes then cut into 1-inch cubes. Toss the potatoes with the oil, spices, and parmesan cheese until evenly coated.
Photo 2 - Spray your air fryer basket with cooking spray then add the coated potatoes.
Photo 3 - Air Fry, giving the basket a shake a little over halfway through, until the potatoes are crispy, golden, and fork tender.
Photo 4 - Serve while they are still warm. I like to sprinkle with some fresh parsley.
💭Recipe Notes and Tips:
- Double the Recipe to Feed the Whole Family - this recipe can easily be doubled to serve more! Depending on your air fryer size, you may need to air fry in two batches.
- Use Even Sized Pieces - For even cooking, it's best to use even-sized pieces of potatoes. Keep this in mind when chopping and dicing.
- Try Other Spices - Try adding other spices to the coating such as onion powder, paprika, cajun seasoning, or even red pepper flakes to give a kick of spic.

An air fryer is essentially a compact countertop convection oven. A fan circulates the hot air at a quick speed which creates a crispy layer on foods without needing to fry in oil. I have this version from Phillips but there are many options on the market! I recommend choosing one with the right size for your family. Potatoes are done when they are fork tender. Fork tender means you can easily pierce the potatoes with a fork. These potatoes should also be golden and crunchy on the outside.
All types of potatoes turn out great in the air fryer! For this recipe, I like to use russet potatoes, but I also love making Air Fryer Sweet Potato Wedges.
🍽Leftovers, Storage, and Reheating
These are crispiest and best served right after making, but leftovers can be stored and reheated later.
Leftovers and Storage: Leftovers can be stored in an airtight container in the fridge. They will keep fresh for up to 4 days.
Reheating: For best results, I recommend reheating the leftovers in the air fryer or oven at 300 degrees F until warmed through and crispy again. If you microwave the potatoes, they will be softer and lose their crunch.

Ingredients
- 1 pound russet potatoes (2 medium-large)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ cup grated parmesan cheese, the kind in a can works!
- 2 tablespoons fresh chopped parsley, optional for garnish
- nonstick cooking spray
Instructions
- Prep Potatoes. Scrub and dry the potatoes. Chop the potatoes into even-sized 1-inch cubes.
- Toss Potatoes. In a medium bowl, toss the potatoes with the oil, spices, and parmesan.
- Air Fry. Spray your air fryer basket with cooking spray. Add the potatoes in an even layer. Air Fry at 400 degrees F for 15 minutes. Give the basket a shake then air fry again for 5-10 minutes until fork tender and golden.
- Serve. Sprinkle with the fresh parsley and enjoy.
Notes
