🥘Ingredients:
- Flour Tortillas - I used 6 inch flour tortillas. But you can use any size as long as it fits folded in half in your air fryer.
- Shredded Cheese - I like to use Monterey Jack or a Mexican blend. The key is to use a cheese that melts well
- Shredded Chicken - Optional, you can do just cheese quesadillas too.
- Cooking Spray
- Toothpicks - For holding the tortilla together

This air fryer cheese quesadilla recipe is super customizable! Here are some of my favorite variations:
- Cheese Only - You can do just cheese if you'd like! I'd add a little extra shredded cheese so they're super melty and cheesy.
- Spicy Chicken - You can toss the shredded chicken with a little hot sauce or hot salsa before adding to the quesadillas.
- Vegetarian - Instead of chicken, try spreading some refried beans on the tortilla before sprinkling with shredded cheese.
- Jalapeño - Add minced or thinly sliced jalapeños to the filling.

Just a quick prep and only about 5 minutes of cook time in the air fryer!
Photo 1 - Spray your quesadilla basket with cooking spray then add a tortilla. Spread cheese and shredded chicken on one half of the tortillas (I like to do cheese, then chicken, then a little more cheese). Fold over the tortilla, carefully, and close with two toothpicks. Repeat with a second tortilla.
Photo 2 - Lightly spray the tops with cooking spray. This helps get them nice and golden.
Photo 3 - Air fry for about 6 minutes at 400 degrees F. The tortillas should be golden brown and the cheese should be melted.
Photo 4 - Allow to cool for a minute or two then then cut and serve.

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Leftovers can be reheated in the air fryer at 350 degrees F a few minutes until warmed.
